- 2 large aubergines
- 2 cups of sour cream
- 4 or 5 cloves garlic
- 3 or 4 tsp sweet paprika
- sunflower oil
Cut the aubergine into approximately 1 cm slices, add a bit of salt and coat them with flour.
Layer the aubergine slices in an oven tray brushed with some sunflower oil and sprinkle them with some more oil afterwards.
Bake them for 45 minutes in a 180° preheated oven.
Meanwhile, chop the garlic cloves finely and fry them gently in a pan with a bit of oil. Once they are golden and crisp, turn off the heat and add the sweet paprika. Stir it until it dissolves in the oil and strain it. Save the oil and the fried garlic.
Once the aubergines are baked, remove them from the oven and cover them with the sour cream. Decorate the dish with the paprika-garlic oil and, if you like, the fried garlic.
