- 100 g fish (tuna, mahi mahi, barracuda, marlin…)
- 1 banana leaf
- 50 g rice
- 6-8 shallots (or half onion)
- 2 cloves of garlic
- 1/2 inch fresh ginseng
- 1/2 inch fresh ginger
- 1/2 inch fresh turmeric
- 1 pear tomatoes
- 1/2 red chilli
- 1 stalk lemongrass
- 2 tbsp honey
- 1 lime
- 2 tbsp coconut milk
Pepes ikan is an Indonesian fish recipe with coconut milk sauce, cooked on the grill wrapped in banana leaf.
Scald the banana leaf and drain it.
Cook the plain rice and save it for later.
Slice 3 shallots (or quarter onion) and 2 cloves of garlic, and brown them in a pan with a little oil on medium-high heat. Save it for later.
Prepare a ground mixture of ginseng, ginger, turmeric, 1 clove of garlic and 1 shallot (or small piece of onion).
Chop the remaining shallots, tomato, chilli and lemongrass. Add a little honey, a pinch of salt and pepper, the mix (of ginseng, ginger…), and the coconut milk.
Slice the fish and sprinkled it with some drops of lime.
Place the mix on two sheets of banana leaf. Wrap it to shape a rectangular package, and close it with toothpicks.
Cook it on the grill or on the pan, 5 minutes on each side.
Unwrap it and serve it hot with plain rice.
