artichokes with ham

Serves 4

  • 1 dozen artichokes
  • 100 gr Serrano or Iberian ham
  • 4 cloves of garlic
  • parsley
  • salt
  • olive oil
  • 1 tbsp flour
  • 1 lettuce leaf

1 limpiar 2 poner en agua con perejil

Clean the artichokes, removing the stems and harder external leaves, and place them in a bowl with water and parsley (so they do not darken).

When they’re clean, add them in a pot with boiling water along with the stems and cover them with a lettuce leaf (so they do not darken). When the water boils, reduce the heat and let them cook for about 45 minutes. Then, check if they are soft, if they are not, let them cooking a little more.

Strain the artichokes and reserve the cooking water.

Chop ham and garlic, and fry them in a pan with olive oil.

9 rehogar harina 10 rehogada 11 añadir agua de coccion 12 ligar la salsa

Add the flour and fry it for two minutes. Pour a glass of cooking water. Stir it until the sauce become thicker. If it is necessary, add a little more of cooking water.

13 cortar las alcachofas por mitad 14 colocar alcachofas 15 mojar con la salsa 16 colocar tallos

Cut the artichokes in half, and place them in the pan. Sprinkle them with a little sauce. Also place the stems. Let it cooking on low heat for 5 minutes.
