serves 4

  • 400 gr chicken
  • 1 tsp turmeric powder
  • salt
  • pepper
  • oil

for the sauce

  • 1 tbsp lemongrass
  • 5 or 6 shallots (or half onion)
  • 2 or 3 cloves of garlic
  • 1 inch fresh ginger
  • 2 cm fresh turmeric
  • 1 red chilli
  • 200 ml coconut milk
  • 1 tbsp honey
  • 1 tbsp kecap manis (sweet soy sauce)
  • 2 tbsp kecap ikan (fish sauce)
  • 1 tsp cumin
  • ½ tsp cinnamon
  • oil

1 picar ingr 2 rehogar ingr 3 añadir especias 4 reservar

Chop the ingredients to prepare the sauce: lemongrass, shallots, garlic, ginger, turmeric and chilli, and fry them in a pan with a little oil on medium-high heat for 2 minutes. Add the remaining ingredients (except coconut milk): honey, kecap manis, kecap ikan, cumin and cinnamon. Stir it for a minute. Taste it and add more kecap ikan if it is not salty enough, or more chilli if it is not spicy, or honey or kecap manis if it is too much salty. Remove the sauce from the heat.

Chop the chicken. Sprinkle it with salt, pepper and curry. Fry it for 2 minutes in a pan with a little oil on medium-high heat. Then add the sauce and coconut milk. Turn the heat down and let it cook for 3 or 4 minutes, stirring frequently.
