pais udang (spicy prawns in banana leaf)

pais udang ingr pais udang (gambas picantes)

Serves 1:

  • 100 g peeled prawns
  • ½ inch ginger
  • ½ inch turmeric
  • ½ inch ginseng
  • ½ red chilli
  • 1 tbsp lemongrass
  • 1 lime
  • 2 tbsp coconut milk
  • 5 or 6 shallots (or half onion)
  • 2 cloves of garlic
  • salt
  • 1 banana leaf
  • 50 gr rice
  • oil              

1 blanquear hojas 2 secar

Scald the banana leaf and drain it.

Cook the plain rice and save it for later.

3 picar ingr 4 añadir leche de coco 6 añadir gambas

Chop ginger, turmeric, ginseng, chilli, shallots, garlic and lemongrass. Squeeze the lime. Mix these ingredients and add salt, coconut milk and prawns.

8 colocar en hojas 9 cerrar hojas

Place the mix on two sheets of banana leaf. Wrap it to shape a rectangular package, and close it with toothpicks.

18 parrilla 10 poner en la sarten 11 dar la vuelta

Cook it on the grill or on the pan, 5 minutes on each side.

Unwrap it and serve it hot with plain rice.
