- 24 prawns
- 200 gr vermicelli noodles (rice noodles)
- 200 gr soybean sprouts
- 8-10 shallots (or half onion)
- 1 onion
- 4-6 cloves of garlic
- 2 tbsp lemongrass
- 6 dried chillies
- 2 cm fresh ginger
- 2 cm fresh turmeric
- 2 tbsp cumin
- 2 tsp cinnamon
- 2 star anise
- 4 cardamom pods
- 4 cloves
- black pepper
- 1 tsp turmeric
- 1 tsp sugar
- 200 ml water
- 200 ml coconut milk
Peel the prawns. Then, cook the shrimp shells in 200 ml of water. Drain it and save the liquid for later.
In a pot, heat 500 ml of water and when it starts boiling, remove the pot from the heat and add the noodles. Let them rest for 2 or 3 minutes and drain them.
Chop shallots and brown it in a pan with a little oil on medium-high heat. Drain it and set it aside.
Chop onion, garlic, ginger, turmeric, lemongrass and chillies and fry it in a pan with a little oil on medium heat.
Add cumin, star anise, cinnamon, cardamom, cloves, black pepper, turmeric, sugar and salt. Stir it.
Pour the drained water of the shrimp shells and then the coconut milk. Stir it for a minute and add the peeled prawns.
Cook 2 or 3 minutes and add soybean sprouts. Stir it and cook a few more minutes.
Serve it with noodles and golden shallots.
