Serves 4:

  • 325 gr rice
  • 600 ml coconut milk
  • 2 eggs
  • 1 lime leaf
  • 1/2 cucumber
  • 50 gr peanuts
  • 20 gr fried anchovies
  • salt

For the garnish:

  • 50 gr fried anchovies
  • 1/2 onion
  • 3 or 4 dried chillies
  • 4 shallots
  • 1cm shrimp paste
  • 75 ml water
  • 1/2 tsp tamarind
  • 1/2 tbsp sugar
  • oil

Wash the rice and place it in a pot on medium heat along with coconut milk, lime leaf and salt. Stir it from time to time and let it cook until the coconut milk has evaporated. Set it aside.

To prepare the garnish, chop chillies and shallots, and fry them in a pan with oil. Add shrimp paste. Dissolve the tamarind in water and pour it into the pan. Cut the onion in julienne slices and add it to the pan, along with sugar, salt and anchovies. Low the heat and let it cook until the water has evaporated.

Meanwhile, place the egg in a pot with cold water and salt, and cook it on medium heat. Ten minutes after the water starts boiling, remove the egg from the heat and let it cool. Later, peel and chop it. Slice the cucumber.

Fry the peanuts in a pan and add anchovies.


Serve the rice along with the garnish, mix of peanuts and anchovies, egg and cucumber.
