Serves 4

  • 400 gr pork
  • salt
  • 60 g sweet soy sauce
  • 3 tbsp flour
  • 1 tsp ground ginger
  • oil
  • 250 gr rice
  • 2 tbsp butter
  • 4 garlic cloves
  • 1 onion
  • 2 stalks lemongrass
  • 1/2 red chilli
  • 1 cm fresh ginger
  • 200 gr mushrooms
  • pepper
  • ground cayenne
  • cumin
  • some oyster sauce
  • some rat rasa sauce
  • 60 gr sweet soy sauce

Dice the meat and mix it with salt, 60 gr sweet soy sauce, flour and ginger. Let it marinate for about 30 minutes.

Meanwhile, prepare plain rice.

Chop garlic, onion, lemongrass, chilli and ginger, and fry them in a pan with butter on medium heat for 2 minutes.

Chop the mushrooms and add them to the pan, and fry them for 2 or 3 minutes. Then add the meat and fry it for 5-10 minutes.

Add the spices (pepper, cayenne and cumin) and sauces (a little oyster, a little rat rasa and 60 gr sweet soy).

Stir it and pour a glass of water. Let it cook for 30 to 45 minutes. Add salt to taste and some water if it is necessary (the pork should be tender).

Serve hot with plain rice, prawn crackers (krupuk) and a few slices of tomato.
