Serves 4:

  • 250 gr rice
  • 1 l water
  • 1 lime leaf
  • 4 or 5 shallots (or half onion)
  • 2 or 3 garlic cloves
  • 12 dried chillies
  • 1 stalk lemongrass
  • 1 cm shrimp paste
  • 300 gr fried peanuts
  • 1 tbsp tamarind
  • 1 glass water
  • 2 tbsp sugar
  • oil
  • salt

1 hacer arroz 2 hecho

Wash the rice and place it in a pot on medium heat along with water, lime leaf and salt. Stir it from time to time and let it cook until the water has evaporated (about 20 minutes).

Place the rice in a pan and smash it until it turns into a smooth and easy to shape dough. Let it cool.

Chop shallots, garlic, dried chilli, lemongrass and shrimp paste, and fry them in a pan with a little oil on medium-high heat.

Crush the peanuts. Dissolve the tamarind in water.

10 añadir manis jugo agua 11 mezclar

Add peanuts, tamarind juice, a pinch of salt and sugar. Let it cook until it is a thick sauce.

Make a ball with the rice dough and shape small bites. Serve them with the peanut sauce.
