Serve 4

  • 400 gr chicken breast
  • 3 shallots (or half onion)
  • 1 onion
  • 2 lemongrass stalks
  • 2 potatoes
  • 4 cm cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 glass water
  • 10 gr rice noodles
  • oil
  • salt
  • 1 cm ginger fresh
  • 2 cloves garlic
  • 1 tsp coriander
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp black pepper
  • 60 ml water

Chop and grind ginger and garlic. Mix it with coriander, cumin, turmeric, pepper and water. Chop chicken and add it to the mix. Add salt to taste and let it marinate for 15 minutes.

Chop shallots and fry them in a pan with oil until they are golden. Set them aside.

Cut the onion into julienne slices and the lemongrass stalks into rings. Peel and chop the potatoes. Fry onion, lemongrass, potatoes, cinnamon, cardamom and cloves in a pan with a little oil on medium heat. Salt to taste. When the onion is brown, add chicken and fry them 2 minutes.

Then, pour water and cover the pan. When it starts boiling, low the heat and let it cook until the potatoes are soft (about 15 minutes).

Finally, add noodles and stir it. Let it cook 1 minute and serve the soup hot.
