Serves 4

  • 400 gr flour
  • 4 eggs
  • 2 tbsp olive oil
  • salt

1 tamizar harina 2 mezclar

Sift the flour, mix it with the salt, put it in a bowl and make a hole in the middle. Beat the eggs and pour them in the hole along with the olive oil.

Carefully, stir the beaten eggs, so slowly they mix with the flour. When the mix is homogeneous, knead from the center out, folding it in half each time, until it is a smooth dough but firm. Make small balls. Cover them with a damp cloth and let them rest for 15 to 30 minutes.

6 estirar

Then, stretch them with a rolling pin until they are thin and rectangular sheets.

7 cortar

With a knife cut along the pasta, shaping it into tagliatelle. Let them rest for 15 minutes in a pasta-drying rack.

8 cocer 9 colar

Place a pot with abundant water on high heat and add salt. When it is boiling, add the pasta and stir it to avoid sticking. When the pasta is ready, strain it, add some olive oil and stir it.
