- 500 gr fresh shelled peas
- 120gr chorizo
- 6 garlic cloves
- 4 eggs
- 1 tsp flour
- olive oil
Place a pot with water and salt on medium-high heat. When it is boiling, add peas and let them cook on medium-low heat until they are softened (around half hour).
Meanwhile, chop garlic and chorizo.
When the peas are soft, drain them and save them separate (peas and broth) for later. Place the peas in a bowl with cold water, so they don´t lose color.
Fry garlic in a pan with a little oil on medium heat. When it starts to brown, add chorizo. Stir it for few minutes and add flour. Stir it for 2 more minutes and pour a little broth (around half a glass).
Drain peas, add them to the pan and stir them.
Finally, break the eggs over the peas. Salt them and pour a little oil over them. Cover the pan and let them poach for 4 or 5 minutes.
