Salchipapas is one of the fast food popular dishes of many South American countries (Peru, Bolivia, Ecuador, Colombia and Chile). It is sold in many street stalls and small shops any time of day.
Peel, wash and cut into sticks the potatoes. Fry them in a pan with abundant hot oil. When they are ready, remove from the pan and set it aside.
Cut sausages and fry them quickly in a pan with a little oil.
Mix potatoes and sausage and serve them hot with mayonnaise.
