spanish omelette

Serves 4

  • 3 medium potatoes
  • 1 onion
  • 6 eggs
  • sunflower oil
  • salt

1 partir las patatas          

Peel, wash and chop potatoes.

2 picar cebolla 3 mezclar y salar

Chop onion. Add it to the potato and salt it.

4 freir 5 tapar

Place a pan with one centimetre of oil on medium heat. When the oil is hot, add potato and onion. Stir it. Reduce the heat and cover the pan, so that the potato gets slowly poached. Stir it from time to time.

7 fritas 6 fritas

When the potato is poached, smash it in the pan, and let it cook 5 more minutes.

8 escurrir

If necessary, drain the potato and save the oil to fry the omelette later.

9 batir 10 batir 11 mezclar

Beat the eggs and mix them with the potato.

12 freir 13 frieir

Place the pan on high heat with the oil. When it is hot, add the mix. Then, reduce the heat so that the omelette is cooked inside.

14 dar la vuelta 15 hecha

3 or 4 minutes later, turn the omelette upside down using a plate and let it cook other 3 or 4 minutes. If necessary, turn it again until brown both sides.
