- 2 mangos
- 200 gr sticky rice
- 150 ml coconut milk
- 5 tbsp palm sugar
- a pinch of salt
- 4 tbsp coconut cream
- 4 sprigs of mint
- 1 tbsp white sugar
- 1 tsp cornstarch
The night before, place the rice to soak (the water must exceed the rice more than 5 cm).
Drain the rice and steam it for 30 minutes, on medium-low heat. Cover it.
Heat coconut milk, sugar and salt in a pot on low heat (so the milk doesn´t boil) and stir it frecuently.
Mix rice and coconut milk. Cover it and let it cool for some minutes.
Meanwhile, wash the mint leaves. Heat the coconut milk with the mint leaves, white sugar and cornstarch on low heat (so the cream doesn´t boil).
Stir rice and serve it with slices of mango and coconut cream.
