khao niao mamuang (sticky rice mango)

Serves 4

  • 2 mangos
  • 200 gr sticky rice
  • 150 ml coconut milk
  • 5 tbsp palm sugar
  • a pinch of salt
  • 4 tbsp coconut cream
  • 4 sprigs of mint
  • 1 tbsp white sugar
  • 1 tsp cornstarch

1 poner a remojo el arroz 

The night before, place the rice to soak (the water must exceed the rice more than 5 cm).

2 escurrir 3 poner agua en vaporera 4 poner arroz en colador 5 tapar cazuela 6 arroz hecho

Drain the rice and steam it for 30 minutes, on medium-low heat. Cover it.

8 calentar azucar y leche 9 caliente

Heat coconut milk, sugar and salt in a pot on low heat (so the milk doesn´t boil) and stir it frecuently.

10 mezclar arroz y leche 11 mezclado 12 tapar

Mix rice and coconut milk. Cover it and let it cool for some minutes.

13 lavar hojas 14 calentar hojas y leche

Meanwhile, wash the mint leaves. Heat the coconut milk with the mint leaves, white sugar and cornstarch on low heat (so the cream doesn´t boil).

Stir rice and serve it with slices of mango and coconut cream.
