- 500 gr variety of mushrooms
- 500 ml water
- 400 ml coconut milk
- 4 or 5 shallots
- 2 or 3 garlic cloves
- 2 tbsp oyster sauce or fish sauce
- 1 tbsp sugar
- 4 cm fresh galangal or fresh ginger
- 2 lemongrass stalks
- 4 kaffir lime leaves
- 1 lime
- 1 chili
Chop chilli and fry it.
Chop garlic, shallots and lemongrass stalks. Chop dill.
Heat the water in a pot along with the chopped vegetables, galangal, lime leaves and coconut milk. Let it cook for 3 minutes.
Wash mushrooms and add them to the pot. Add salt and sugar too. Let it cook 3 more minutes.
Remove the pot from the heat and add oyster sauce and lime juice.
Serve the soup with dill and fried chilli.
