Lao original recipe. In Thailand is known as som tam.

Serves 4:

  • 400 gr green papaya
  • 2 garlic cloves
  • 4 red chillies
  • salt
  • 2 limes
  • 3 or 4 tbsp fish sauce or oyster sauce
  • 4 tsp palm sugar
  • 8 small tomatoes
  • 125 gr toasted peanuts and cashew nuts

Crush peanuts and cashew nuts.

Peel green papaya.

Keep it up using a clean cloth and, with a knife, make lots of parallel cuts.

With the peeler, cut slices from the surface to get very thin strips of papaya.

In a mortar crush garlic and chilli along with a punch of salt (it´s not necessary make a dough).

Add papaya and stir it to mix the flavours.

Squeeze the limes and add the juice to the mortar along with fish sauce and sugar. Mix it.

Wash and chop tomatoes, and add them to the mortar. Stir it to mix the flavours, but not breaking the tomatoes. Taste it and, if necessary, add some fish sauce or salt.

Mix it and serve the salad with ground peanuts and cashew nuts.
