Serves 4

  • 300 gr rice noodles (tagliatelle)
  • 200 gr pork
  • 3 tbsp sugar
  • 2 eggs
  • oil
  • salt
  • 1 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 2 tbsp sweet soy sauce
  • 50 gr peanuts and cashews nuts
  • 1 lime
  • 2 or 3 shallots
  • 1 or 2 garlic cloves
  • 100 gr soybean sprouts
  • coriander
  • chive

Place the noodles to soak in warm water for 15 minutes. Then, strain them and reserve them.

Melt the sugar, not stir it, in a pan with a little oil on high heat. When the sugar starts to caramelize, break the eggs on one side of the pan. When they start to set, stir them and add pork, oyster sauce and salt on the other side of the pan. Stir it and, when it is cooked, mix eggs and pork and add the noodles. Stir them on low heat. Later, add soy sauce and sweet soy sauce. Stir them and add soybean sprouts.
