No eggs:
- 150 gr ube or purple yam (120 gr cooked)
- 125 ml milk
- 150 ml cream
- 150 ml condensed milk
- 1 tbsp sugar
With eggs:
- 200 gr ube or purple yam (150 gr cooked)
- 105 gr condensed milk
- 3 eggs
- 25 gr sugar
Peel, chop and wash the ube.
Place it in a pot, cover it with water and let it cook for 30 minutes.
Then, smash it and strain it.
No eggs: mix milk with mashed ube. Beat cream with condensed milk and sugar. Stir both mixtures with a spoon.
With eggs: beat yolks with condensed milk and mashed ube. Whisk the egg whites until they are stiff. Mix them with sugar. Then add them gradually to the mixture of ube.
Freeze for 12 hours. Stir it every 30 minutes the first two hours.
