ube ice cream

No eggs:

  • 150 gr ube or purple yam (120 gr cooked)
  • 125 ml milk
  • 150 ml cream
  • 150 ml condensed milk
  • 1 tbsp sugar

With eggs:

  • 200 gr ube or purple yam (150 gr cooked)
  • 105 gr condensed milk
  • 3 eggs
  • 25 gr sugar

1 pelar y trocear ube 3 escurrir

Peel, chop and wash the ube.

2 cocer 7 ube cocido

Place it in a pot, cover it with water and let it cook for 30 minutes.

8 escachar ube 9 colar 10 reservar

Then, smash it and strain it.

1 mezclar leche y ube 1 ya mezclado 2 batir la nata 3 batida 4 añadir azucar 5 mezclar6 juntar todo 7 congelar

No eggs: mix milk with mashed ube. Beat cream with condensed milk and sugar. Stir both mixtures with a spoon.

4 separar yemas 5 mezclar con leche condensada 14 mezclar ube y huevo 15 mezclado 6 batir claras 11 claras a punto de nieve 12 añadir azucar 13 claras montadas 16 añadir clara montada 17 añadir clara montada 18 añadir clara montada 20 congelar

With eggs: beat yolks with condensed milk and mashed ube. Whisk the egg whites until they are stiff. Mix them with sugar. Then add them gradually to the mixture of ube.

8 helado de ube 

Freeze for 12 hours. Stir it every 30 minutes the first two hours.
