Serves 4
- 500 gr chicken
- 400 gr potatoes
- 200 gr peppers (green and red)
- 2 small pear tomatoes
- 1 carrot
- 1 red onion
- 2 or 3 garlic cloves
- a pinch of salt
- a pinch of sugar
- 15 gr cornstarch (1 tsp and a half)
- 1 tsp and a half water
- 350 ml water
- oil
Cut the chicken into large pieces and fry them in a pan with a little oil until they are golden. Then, remove them from the pan and set them aside.
Peel and cut potatoes and carrot into large pieces and fry them in the pan with a little oil until they are almost cooked (around 10 minutes). Then, remove them from the pan and set them along with the chicken.
Chop and fry pepper, onion and garlic. Add tomato, salt, cornstarch dissolved in one and a half teaspoon of water, chicken, potatoes, carrot and the remaining water.
Let it cook until the potatoes and carrot are cooked and the sauce is thickened (around 10 to 15 minutes).
