tom kha kai (chicken soup with coconut milk)

Serves 4

  • 400 gr chicken
  • 300 gr variety of mushrooms
  • 500 ml water
  • 400 ml coconut milk
  • 4 shallots
  • 2 garlic cloves
  • 2 tbsp fish sauce (or oyster sauce)
  • salt
  • 1 tsp sugar
  • 4 cm fresh galangal or fresh ginger
  • 2 lemongrass stalks
  • coriander
  • 4 kaffir lime leaves
  • 1 lime
  • 2 chillies

1 freir guindillas 2 guindillas fritas

Chop chilli and fry it.

Chop garlic, shallots and lemongrass stalks. Chop coriander.

7 calentar leche de coco y demas

Heat the water in a pot along with the chopped vegetables, galangal, lime leaves and coconut milk. Let it cook for 3 minutes.

6 laminar pollo 8 añadir pollo

Slice chicken and add it to the pot. Add salt and sugar too. Let it cook around 3 minutes.

4 lavadas 9 añadir setas

Clean the mushrooms, add them to the pot and let them cook for 2 more minutes.

10 remover

Remove the pot from the heat and add fish sauce and lime juice.

Serve the soup with coriander, fried chilli and lime wedge.
