- 400 gr chicken
- 300 gr variety of mushrooms
- 500 ml water
- 400 ml coconut milk
- 4 shallots
- 2 garlic cloves
- 2 tbsp fish sauce (or oyster sauce)
- 1 tsp sugar
- 4 cm fresh galangal or fresh ginger
- 2 lemongrass stalks
- 4 kaffir lime leaves
- 1 lime
- 2 chillies
Chop chilli and fry it.
Chop garlic, shallots and lemongrass stalks. Chop coriander.
Heat the water in a pot along with the chopped vegetables, galangal, lime leaves and coconut milk. Let it cook for 3 minutes.
Slice chicken and add it to the pot. Add salt and sugar too. Let it cook around 3 minutes.
Clean the mushrooms, add them to the pot and let them cook for 2 more minutes.
Remove the pot from the heat and add fish sauce and lime juice.
Serve the soup with coriander, fried chilli and lime wedge.
